This coffee is named after the Bombe Mountains, home to many of the smallholder farmers who grow and supply the cherries used in this lot.
The unique process behind this coffee was inspired by a visit to Guatemala. After seeing the innovative fermentation methods at La Esperanza Antigua—run by Josue Morales of Los Volcanes Coffee—Kenean Dukamo, son of Asefa Dukamo (owner of Daye Bensa), brought the idea back to Ethiopia.
Working closely with Josue and Daye Bensa’s quality team, they developed a dry fermentation method, a twist on the classic washed process. In this version, the coffee is depulped and then left to ferment without any added water in climate-controlled tanks. The warm air accelerates fermentation, resulting in a rich, fruity, and complex flavor profile, particularly red fruit notes, while still achieving a clean cup.
