Finca Granja El Paraíso-92 is a family-owned farm dedicated to producing high-quality coffees from a wide range of varieties including Java, Pink Bourbon, Geisha, Pacamara, Caturra, Tabi, Castillo, Supremo, and Colombia. The farm uses advanced and innovative cultivation techniques such as terracing, drip irrigation, strategic shading, and nutritional planning based on laboratory analysis. These practices aim to consistently produce exceptional coffees—something reflected in the multiple awards the farm has received.
El Paraíso-92 is also equipped with its own microbiology lab, quality control lab, and processing plant. The coffee processing begins with the careful selection, sterilization, and characterization of the cherries. This is followed by a first phase of controlled anaerobic fermentation, during which a specific microorganism is added, tailored to each individual coffee lot.
After this stage, the coffee is pulped and enters a second fermentation phase. Once fermentation is complete, the beans undergo a thermal shock treatment—a sealing process using alternating hot and cold water—which enhances the organoleptic properties (taste, aroma, mouthfeel) of the coffee.
